Honey Butter

Smooth, sweet and soft out of the fridge. All you could ask for in a honey butter.

Ingredients
  

  • 1 cup sugar
  • 1 cup honey
  • 1 cup heavy whipping cream
  • 1 pound salted sweet cream butter 4 sticks
  • 1 tsp vanilla

Method
 

  1. Constantly stirring with a rubber spatula, bring the sugar, honey and whipping cream to a boil to dissolve the sugar.
  2. Remove from heat and add vanilla.
  3. Put cold butter in a high powered blender.
  4. Pour boiling mixture over butter and blend until smooth, with no remaining chunks of butter.
  5. Pour into containers and refrigerate overnight before eating.
  6. Store in the fridge.
